Raw fish is a delicacy on its own and makes one of the strongest key ingredients in so many different regional cuisines. Each culture does it differently: Japan has sushi and sashimi, Latin America has ceviche, Italy has crudo and Scandinavia has gravlax. Hawaii has poké.
We fell in love with poké after visiting the Hawaiian Islands.
Fresh, healthy and delicious, poké took simply all of the best components of sushi and put them together in an easy to eat way. Let’s just say we couldn’t stop at eating just one bowl.
Being Singaporean at heart, however, we love the diversity of the Lion city’s culinary landscape and wanted to meet in the middle of Marina Bay’s Merlion and the aku boats of Hawaii’s fishing areas. But since that would have put us right smack in the middle of the Pacific, we instead decided to set-up a Poke bar on Keong Saik, where we’ve updated the same savoury mix of rich Ahi tuna, shoyu and sesame oil with the inventive flavour combinations of Singapore’s international cuisine.
